Chef Candy is a brilliant, creative, inspiring and incredibly patient teacher. No imperious chef at this address. No criticism either. She “suggests” in a most helpful way so that students truly grok the rationale behind the corrections, techniques, strategies and recommendations she imparts. She is clearly passionate about food and enthusiastically conveys that feeling whether it’s creating a menu, selecting the finest ingredients available, prepping, cooking, plating, serving or sitting down with her guests. In a Vanity Fair article on Julia Child published years ago, the author described France’s values as “doing things correctly, taking time to get it right, work hard and learn your technique.” Chef Candy personifies those qualities … and does so with humor and joy!

Chef Candy Wallace is a jewel of the finest American city (San Diego), and she is the first female inductee into the prestigious Disciples of Escoffier, sharing ranks with the worlds best chefs including Jeremiah Tower and Thomas Keller.Chef Candy started the personal and private chef industry to give a second chance and career options to working moms and others who can no longer put in the kind of hours or nights required to be in the restaurant system.
